Course Purpose
  • This course is designed to provide you with a  basic foundation of table setting basics in fine dining.
  • It will take approximately 30 minutes to complete the course, depending on your own pace.
  • The design of the course is structured to be followed in a precise order, since table setting is to be done in a precise order.
  • There will be short assessments that you can take at the end of each section, or all together at the end of this course.

  • The goal of this lesson is for you to be able to define the steps in the linen process for setting a table

Introducing the Tablecloth Process
  • The first part in the sequence of setting a table, is the tablecloth process.


  • To do this:
  • 1. Choose a clean and well-pressed tablecloth to lay on the table.


  • 2.  Select a padding called a silencer and install on the  table. The silencer prevents loud noises from stemware and silver when they connect with the table surface


  • 3.  Arrange the tablecloth so that it hangs freely and is even on all sides


  • 4. Continue to follow precise process of arranging all of the tablecloths the same way so they are in congruence

Arrange tablecloths the same way for all tables
  • -The last step is very important as to ensure consistency and uniformity throughout the entire restaurant
  • -This step should be followed for the tablecloth process and for the entire process of setting each table.

The Napkin
  • -Napkins should be inspected prior to use.
  • -Should be free of stains, flaws, and wrinkles
  • -Fold them all properly the same way
  • -Store them folded on the setup cart until after the china, silver and stemware has been set

  • The linen process is the first step of the table setting process.


  • It is imperative that each step in the table setting process is done in order so that the fine dining restaurant has consistency and is appealing to the eye.

China and Silver-where?
  • The goal of this lesson is for you to be able to identify the china and silverware that is involved in the table setting process.

Some basic rules..
  • Start with the show plates first, and continue clockwise around the table until each seat is set with that item, then start with the next item and follow the same pattern, etc.


  • Placement of items on the table are set by using a precise sequence so that each item will act as a guide to place the next item.

  • Each glass should be steamed and polished before setting.
  • Hold glasses by the stem only
  • Position water glass ½ inch above the tip of the appetizer knife
  • Position the wine glass next ½ inch above the tip of the entrée knife, to the left slightly above the water glass.
