basics in fine dining.
- It will take approximately 30 minutes to complete the course, depending
on your own pace.
- The design of the course is structured to be followed in a precise
order, since table setting is to be done in a precise order.

- The goal of this lesson is for you to be able to define the steps in the
linen process for setting a table

- steps in the tablecloth process
- Identify the proper way
- to choose linen to use for setting a table

- The first part in the sequence of setting a table, is the tablecloth
process.
- To do this:
- 1. Choose a clean and well-pressed tablecloth to lay on the table.
- 2. Select a padding called a
silencer and install on the
table. The silencer prevents loud noises from stemware and silver
when they connect with the table surface
- 3. Arrange the tablecloth so that
it hangs freely and is even on all sides
- 4. Continue to follow precise process of arranging all of the
tablecloths the same way so they are in congruence

- -The last step is very important as to ensure consistency and uniformity
throughout the entire restaurant
- -This step should be followed for the tablecloth process and for the
entire process of setting each table.

- -Napkins should be inspected prior to use.
- -Should be free of stains, flaws, and wrinkles
- -Fold them all properly the same way
- -Store them folded on the setup cart until after the china, silver and
stemware has been set

- It is imperative that each step in the table setting process is done in
order so that the fine dining restaurant has consistency and is
appealing to the eye.
- There are many details involved in the linen process, so feel free to
